PROTEIN PANCAKES (serves 1)

3 Pancakes:

  • 3 egg whites or 2 eggs
  • 1 cup almond meal (or 1/4 cup coconut flour)
  • 1 tbs LSA
  • 1/4 banana, mashed
  • small handful or shredded coconut
  • 1/2 cup berries
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1tsp stevia powder
  • 2-3 tbs almond milk
  • 1/2 tsp baking powder
  • 1 tsp extra-virgin coconut oil
  1. In a mixing bowl, whisk the eggs.
  2. Add the rest of the ingredients except oil and stir.
  3. Heat the oil in a large non stick frypan over a medium heat. ladle in one-third of the mixture and cook each side for 2-3 minutes, or until lightly golden.
  4. Serve with your choice of toppings.
